Reported to Police.
ITT had a stoplock on the steering wheel which should have deterred the casual thief.
The Police will stop it if they see it.

I’m sorry to hear this,
I imagine it was trailered away as cutting the steering wheel lock would be noisy and draw attention.

Stephen thought he heard tyres screaming so maybe the thieves had a key that fitted the stoplock. They would still have needed to disable the steering lock.
After this amount of time, she is probably not in London and may have been exported.
I think that the only proactive thing I can do is monitor eBay. If a thief realises that she is in original condition, the car may be listed intact, but if she is being broken for spares, I will probably never see her again. In that case, I'm quite worried about whether insurance will pay out her true value.

^^ this. SXOC snr management sorted out a valuation for old 14a when the insurance cocked around. Way better settlement
Admiral use Banwells Automotive Solutions who had sight of the car 3 years ago when she was rear ended while Abbey Motorsport had her for a variety of works.
As a result, although it now seems that she is a total loss, Banwells have a starting valuation and as she has only done 2,000 miles in the past 3 years, they have added £2,000 to the 2021 valuation. I haven't mentioned what that valuation is here as I am loath to talk numbers in open forum. I will say that it is a low 5-figure sum.
Banwells were keen to mention that she was built for the British market and was in original condition less reasonable wear and tear. It seems like a reasonable figure if Admiral will come to the party.

Do some digging on FB marketplace, autotrader, pistonheads and see if there are any adverts for cars or similar age/mileage/spec and see what prices they are up for. Give those to Branwells and see what they say.
+£2K in 4 years isnt realistic IMO but without knowing anything other than numberplate difficult to give any more insight

It isn't really possible for anyone to help determine if your valuation is fair without knowing what you agreed in 2021 or seeing pictures of the overall condition of the car.
