Well I'm about to find out as I now need a new car and I have similar requirements to you.
Go for a mapped D5.
Our xc70 was surprisingly quick for what it was and returned 60+ mpg on a run.
D5 manual remapped at Collins performance as far they could push all stock parts.
I would never have a manual by choice again tho

I have never owned a Ford before the Mondeo and I have to say, its excellent. 58 mpg on a long run, loads a room, comfy over long distances and the 180ps model has some shunt for a big estate.
The prices are considerably cheaper than the german cars and I think they are a very underrated car. I paid close to 15k for my titanium spec but it had only 15k miles on it. A mate has just bought a similar age Zetec with 105k miles on it for 7k.

2016. Doing around 25k miles a year and wanted something that would last 4 years, hence low mileage diesel 180ps model.
Nicest surprise was it came with a fold-away towbar with electrics that I didn't find until I washed it for the first time. lol That saved me a good £500 as I planned to fit one.
Later 2.0 diesel 180ps is sweet and v. quiet and can be remapped I believe but, for me, doesn't need it.
Lane depart and auto headlamp dip/dazzle are the only two things I hate about it. My other half likes them on but they're the first thing I switch off when I get in the car.
