I can get 18x9 ET15 and 18x10 ET25 do you guys think this will be ok ?

Really depends on the tyre sizes you’re intending to run. Have the arches been rolled etc also?

Im open to any size tyre tbh just Guna be street/road maybe some track days,
Arches are flared not sure on the size as they are fitted to the car when i received it but i don't mind rolling them either

The offsets you choose will depend on what look you are after? Poke fitment and flush fitment require different offsets.
Those offsets you’ve mentioned will work, you’ll need to roll the arches if you’ve not already done them.
235 up front and 255 on the back would be ideal tyre choice.
