Not much tbh unless you re-locate fuse boxes and tuck the loom.
Other than that relocate battery to boot, a/c delete, carbon cannister if it has one and hot start solenoid.

ABS delete and rust,clean/rust treat/cut out rusty bits weld etc and repaint the whole bay
and fix all the things that are a lot harder to do when the engine is back in
could tub front arches if planning to skid and need more lock
steering column solid bush if not done is so much easier when engine is out
clutch damper delete, its easier to get to the CMC with engine missing
clean repaint Brake Servo and BMC +CMC
clean/degrease front X member/steering rack and change rack bushes to poly would be easier
there is probs more,I'm re-doing my bay atm I may post back with more things (depends how involved you want to get as well I guess)

Hot start lives on near side strut turret in the engine bay behind the ignition amp on a bracket fixed to the Ign amp iirc

Annnnd is it a problem to use a universal expansion tank as mine busted

You can get replacement expansion tanks from gk tech at a reasonable price.
But you can use a different one but ideally retain stock position imho.
