Just to sumarise.. he pays her 2k for 1 weeks time with a lady.
She pays the lady most of the 2k, keeping a fee for herself.
He was given access to said lady for the week but he himself chose not to take that time with her and now wants his money back?
To me, the only course of legal action he can take is to raise a small claims with a local court. As its under £5k it'll get fast tracked.
Your friend would currently have a very good defence based on the above and I really do not believe this bloke would want to proceed with a claim seeing as the main question when filling out the form is "Particulars of Claim".
If I were this friend, I would perhaps write a letter to him so that it is a physical document to refer back to reminding him that it was his decision not to make use of the time provided and that although he is entitled to make a legal claim via court which will be defended and then counterclaimed, to further state any future communication not regarding this claim process will be treated as harassment and the police notified.

I'd say the biggest worry for your friend is this turning official.
They will come down hard on her for tax evasion unless she somehow has books in order.
Your friend needs to speak to the girl involved, and find out her position on it so to speak. If she is willing to return half for example, that may keep all sides happy.
