They aren't that fussy really. As mentioned they orinially just used regular glycol antifreeze (usually blue) and they are also fine on OAT. But I would not bother with HOAT or anything else.

They are not very fussy on coolant.
Regular blue glycol, or OAT is fine. Important thing is not mix different types of coolants. Always drain and replace if you are unsure what is in there.

Yes you can use the VW507.00 in place of the 506.01. The 506.01 was the longlife oil for pd engines before the dpf's were introduced, once they came on the scene the VW507.00 was brought into action...
