A little bouncing up and down over bumps seems to be normal. Perhaps 1-2cm up and down OK at a guess as the gearbox mount doesn't have to take much weight really so bumps will make the gearstick bounce up and down
If it wobbles when pulling away, this could indicate a misfire or more likely a juddery clutch but these will (should) be obvious
