Ok - we've moved to a gratuitously powerful server running the exact same versions of software that we'll be running on our final home, to see if it's MySQL, PHP or server spec that's to blame.

Yup. Not bad though to get the whole thing shifted in under 30 minutes though.
Unfortunately we can't stay on this server :(
