Just changed the head gasket on my mums rover last week.
It is fixed as there is no mayo stuff and car is driving ok in town
Its a rover 414 N reg
Drove it 30 miles and the temp guage went rite up, but no loss of water or steam. It goes up then comes back down to normal temp.
I'm thinking its an air bubble in the water or could I be wrong

Or could it be the thermostat?

Well it could be both. Take the thermostat out and put it in a bowl and pour boiling water over it and see if it opens up. If it does then it should be ok, and the problem could be an air lock.

I know its probably obvious but its the only responce you've got so far. Hope it helps

best to change the thermostat anyway... just to be safe, they ain't expensive.
