I use (registered) Audiograbber (www.audiograbber.com-us.net) with the Lame mp3 codec. Unregistered it only lets you rip half the tracks each go, and picks which ones you can rip randomly at startup. Other programs are Musicmatch Jukebox, RealJukebox, Audio Catalyst (Audiograbber but uses Xing encoder). Loads of other, just none I can think of right now... Use 128+ kbit, CBR (constant bit-rate, not vbr variable bit-rate) as some players don't support vbr. I use 192kbit for mine which means I can get about 8 hours on 1 cd. With 128 nearer more like 11-12 hours.

I think Musicmatch is reasonably simple. IIRC you can't encode high bitrates with it (shareware version), but not sure about that... Realjukebox is pretty simple too.
